Just under 5 years ago, we bought a lot of unaged Guyana rum and put it in large 250 litre barrels made from virgin oak. They were placed in a warehouse in the cold Danish climate to get a sublime maturation of the rum. The cool climate matures more gently and slowly than the tropical climate, and in this case it has created a rum that is full of oak sweetness, true infallible wood notes, and lots of flavour. It’s a rum with the famous SWR mark, which again means it was originally made at Skeldon on a Blair column still.
