Drunken Jamaica Rum
BANANA bread
- 4 Ripe Bananas
- 60g Chopped Walnuts (optional)
- 60g Dark chocolate chunk chips
- 40ml Hampden Estate 60%
- 40ml homemade vanilla infused rum
- 175g Plain Flour
- 125g unsalted butter melted
- 1 package baking powder
- 2 eggs
- 1/2 teaspoon salt
- 150g Caster Sugar liquidified with banana peels overnight
- 1/2 teaspoon ground Cinnamon & ½ vanilla pod
Preparation
Combine mashed bananas and chopped nuts (with a fork) and rum in bowl.
cover and leave for a few hours to absorb rum (overnight if you can).
The Baking
- Brown your butter (look on YouTube for tips)
- Once done - leave to the side to cool
- Preheat oven to 180°C
- In a medium bowl put the flour, baking powder, salt and cinnamon and combine well.
- In a large bowl mix the melted butter with the sugar and beat until combined. Then beat the eggs into the mix, one at a time.
- Add the mashed banana, chopped walnuts & chocolate chips. Mix well with a wooden spoon.
- Add the flour mix, a 1/3 at a time, mixing in well each time.
- Spoon the mix into a loaf tin (23 x 13 x 7cm)
- Bake for 1 hour at 180°C.
After one hour stick a metal skewer or cocktail stick in and see if it comes out clean. If not check every 5 mins. - Take out - leave to cool and turn out on to tray.
. Tips
- Line the loaf tin with butter and sprinkle Demerara sugar all over shaking off any excess - the sugar will crystallise during baking.
- If you don’t have ripe bananas, place them in the oven at 160C for 40 mins. They will blacken but don’t let them burst.
