I made a quick visit to killik Distillery during a work trip this week, only had 15 minutes to spend but just thought i would share some pics. Their pot still is actually at another site due to local regulations so i didnt get to see it. Its a nice little place up in the hills outside Melbourne with a small Cafe & Bar as well. They have 3 main bottles in their standard range, an unaged white, an unaged white overproof and a blended aged rum with a blend of 1 year and 4 year old rums, along with various gins and vodkas etc. They distill using jamaican style processes with wild yeast muck pits. They are one of the very few in the world that do. Unfurtuantly this type of rum isn’t very desired in our country with the general population, i was told that most of it was exported. Very nice peaple and very happy to discuss thier prosesses etc, very interested to hear that their rums where being discussed on RumX! Once we got chatting they brought out one of thier single casks for me to taste, as well as a few others. They are into making delicious affordable drinking rums rather than high end collector bottlings.

Next time I am in the area ill put a bit more time aside, they also told they could take me across to thier still which would be very interesting, its at a warehouse down the road. They are not allowed to keep it at thier shop due to council regulations not allowing production to occur there.
Thats a great idea @Oliver It should be relatively easy to get your hands on a barrel in Europe as thats where most of it is going at the moment! He was telling me that they wouldnt be able to remain open if there was no export market. Unfortuantly the masses in Australia just dont appreciate this kind of rum.
