SIPPER’S RUM
Distillery/Origin: Jamaica, South America, Asia
Vintage/age: up to 20 years old
The goal of this project was ambitious: we wanted to create a ‘bang for your buck’ rum that is both complex and approachable. Something for experienced spirit lovers and newbies alike. It needed to show the vast complexity that rum has to offer, and be a no-brainer in any situation, whether you are at a bar, with friends, or enjoying a drink at home.
The base had to be pot still rum. The body and structure of a good pot still is hard to replicate and provides the backbone for this blend. We ended up finding a lovely, balanced Latin-American one that may not be extremely characterfull by itself, but provided the perfect texture and a blank canvas. We added layers of funky ripe pineapple and ripe banana with Jamaican Rum. Not a single distillery, but in itself a blend of various profiles.
Another element we look for in a good spirit, is age. Even at this price point we managed to find an Asian column-still rum with a good age to it which gets us notes of wood polish and herbes. This results in a long and complex finish, which is further enhanced by the higher bottling strength of 49%.
A pure rum, un-chill filtered, without coloration. The way it should be.
It’s the kind of bottle you can put on the table for friends so you can save your TDL’s for special occasions
