Und zum Thema Super Juice: ich persönlich halt davon nichts. Ich habe es versucht und finde dass Super Juice deutlich abfällt gegenüber schnöden gepressten Saft. Ich sehe das wirtschaftliche Argument, aber für den Heimgebrauch… Naja.

Same here … super juice = not so super. Lieber frischen Saft und etwas zeste in den Shaker für die Öle.

‘Super Juice’ is simply an overcomplication of the most straightforward ingredient. What could ever top freshly squeezed lime in a Mai Tai?

The technique of acid adjusting, however, does have interesting applications in mixology.

Wow, this thread has been a blast to read. I definitely have some new blends to try out! Speaking of, I found this video yesterday: https://www.youtube.com/watch?v=9YffN1YOnoU&list=WL&index=70&t=306s

In the video the guy compares three Mai Tais, including one made with a Wray and Nephew 17 clone from Greg Easter’s book “Advanced Mixology”. The clone is made with the following:

Rhum JM XO
Smith & Cross
Plantation 3 Stars
Plantation OFTD
Trois Rivieres Blanc (or Rhum JM Blanc)
Grand Marnier
Nastoyka (an infusion made out of star anis, raisins, dried hibiscus flowers, vanilla paste and Plantation 3 Star)

Has anybody else heard of this? I’m intrigued by the addition of the infusion and might have to put this up against Kevin Crossman’s Ultimate Mai Tai blend.

I’m always skeptical when people speak of W&N 17 replicas/clones/copies because that would mean whoever created it had a decent amount of the original stuff at hand – preferably not oxidized – in order to constantly compare and crosstaste during the process. That’s almost an impossible precondition. And even then, since I don’t have a comparison, it always remains on a “trust me, bro” level. Same goes for the Appleton Legend, with the slight advantage that Joy most likely had more ressources than anyone else on the planet. But even she probably was not able to compare it to the original bottle.

That beeing said, this sounds like one hell of a complicated blend :sweat_smile:

I totally agree with you. As far as I understand the W&N 17 was only available for a year or so after the Mai Tai was supposedly created, and had nothing to do with the success of the cocktail years later. And like you said, there is no way to compare the clone to the original. I just enjoy the mad scientist aspect of it all. :slight_smile:

Well, yes and no?!

Firstly it seems like a nice idea to accentuate the Curacao.

But, historically the Curacao that was used was neither heavily aged nor specifically aged alcohol as a base.

I would be afraid that this would be very overpowering

I agree with these statements above.

If one would like to experiment with the ‘orange liqueur’ portion of the Mai Tai, I would look into swapping the Dry Curaçao for a Grand Marnier and Martinique Shrubb blend, which was recently revealed to supposedly yield better Mai Tais.

I will definitely have an influence on the flavor profile. But so does every other part. As we’ve discussed before, orgeat can also be overpowering depending on the brand or homemade.

The rums that are used are definitely highly influential.

So like everything else, it will probably depend on your palate and what your objective is :man_shrugging:

Sure but in the ultimate Mai Tai I think restraining everything but the rum should be the goal.

Which does not mean you won’t get something good or even great.

Indeed, that was my point! You guys need to deliberately keep your strategy the same, even scientifically.

Otherwise you can never keep comparing in the same way :blush:

Quite good! Not the best combination but to be honest, it’s hard to tell what are my favourite rums and/Or association as I don’t compare them at the same time, sometimes after a few months
